Avocado Chopped Salad


Dressing Ingredients
1/4 Cup Olive Oil
1/4 Cup Red Wine Vinegar
1 T. Dijon Mustard
1 Garlic Clove, minced
1/4 Cup Red Wine Vinegar
1 T. Onion, minced
1/2 t. Salt
Ground Black Pepper to taste

Salad Ingredients
2 Avocados
1 Cup Salami, cubed
1 Cup Italian Parsley, coarsely chopped
10 oz. Romaine, chopped
1-2 Cups Chicken, cooked and cubed
4 oz. Mozzarella Cheese, cubed


Dressing: In large salad bowl: combine oil, vinegar, mustard, onion, garlic, salt, pepper. Whisk together until blended.

Salad: Cut avocados in half, remove pit and peel, cut into chunks. Add to dressing and gently toss to coat. Add all remaining ingedients and toss gently to mix.
