Crumble Topping Ingredients
- ¼ avocado, peeled, pitted, finely diced
- 1 cup rolled oats
- 1/3 cup chopped pecans
- ¼ cup flour
- 3 Tbsp brown sugar
- 2 Tbsp avocado oil or melted coconut oil
- 1 tsp cinnamon
- ¼ tsp salt
Crumble Topping Instructions
- Add the avocado, flour, oats, pecans, brown sugar, cinnamon, and salt in a mixing bowl and stir.
- Drizzle the oil over the top of the mixture and stir until you get a crumble texture.
- Set aside.
Filling Ingredients
- 4 baking apples, peeled, cored, chopped or sliced
- 1 Tbsp apple cider vinegar or lemon juice
- 2 Tbsp water
- 8-10 pitted dates, chopped
- ¼ cup brown sugar
- ½ tsp vanilla extract
- 1 ½ tsp cinnamon
- ⅛ tsp salt
Instructions
- Cool for 15 minutes before serving.
- Preheat the oven to 350˚.
- Add apple chunks, apple cider vinegar (or lemon), and water to a bowl and stir to coat.
- Add the dates, brown sugar, vanilla extract, cinnamon, and salt, and mix.
- Spread the apple mixture into an even layer in a parchment-lined 8×8 or 9×9 baking pan.
- Spread the topping over the apple mixture.
- Bake for 35-40 minutes or until the topping is golden brown.
