Dutch Apple Avocado Crumble

Serves 8

Crumble Topping Ingredients

  • ¼ avocado, peeled, pitted, finely diced 
  • 1 cup rolled oats
  • 1/3 cup chopped pecans
  • ¼ cup flour
  • 3 Tbsp brown sugar  
  • 2 Tbsp avocado oil or melted coconut oil
  • 1 tsp cinnamon
  • ¼ tsp salt

Crumble Topping Instructions

  1. Add the avocado, flour, oats, pecans, brown sugar, cinnamon, and salt in a mixing bowl and stir.
  2. Drizzle the oil over the top of the mixture and stir until you get a crumble texture.
  3. Set aside.

Filling Ingredients

  • 4 baking apples, peeled, cored, chopped or sliced
  • 1 Tbsp apple cider vinegar or lemon juice
  • 2 Tbsp water
  • 8-10 pitted dates, chopped
  • ¼ cup brown sugar
  • ½ tsp vanilla extract
  • 1 ½  tsp cinnamon
  • ⅛ tsp salt

Instructions

  • Cool for 15 minutes before serving.
  • Preheat the oven to 350˚.
  • Add apple chunks, apple cider vinegar (or lemon), and water to a bowl and stir to coat.
  • Add the dates, brown sugar, vanilla extract, cinnamon, and salt, and mix.
  • Spread the apple mixture into an even layer in a parchment-lined 8×8 or 9×9 baking pan.
  • Spread the topping over the apple mixture.
  • Bake for 35-40 minutes or until the topping is golden brown.
