
Whip up a festive feast with a very West Pak Holiday Menu this season. Celebrate with some avo-inspired takes on your favorite classic dishes and make your dinner table a little more colorful and healthy. Check out the recipes, below:
Baked Sweet Potatoes with Guacamole
Serves 2

Ingredients
- 2 sweet potatoes
- 1 jumbo avocado, peeled, seeded
- 1 tsp. lemon or lime juice
- 2 Tbsp. red or white onion, finely diced
- 1 Tbsp. cilantro, finely chopped
- ¼ tsp. cumin
- salt and pepper to taste
Instructions
- Mash the avocado flesh in a medium bowl.
- Add lemon or lime juice, onion, cilantro, and cumin and mix together.
- Salt and pepper to taste. Set aside.
- Preheat oven to 450 degrees.
- Line a rimmed baking dish with foil.
- Scrub the surface of the potatoes to ensure they are clean.
- Place potatoes on a foil-lined dish and poke holes in several places with a fork.
- Bake sweet potatoes until tender, 40-50 minutes.
- Let cool.
- Slit the top vertically.
- Spoon on guacamole and serve.
Avocado, Pumpkin & Tofu Salad
Serves 2

Pumpkin Ingredients
- ¼ of a small pumpkin, seeded
- 1 tsp. olive oil
Pumpkin Instructions
- Cut pumpkin into 3/4-inch slices.
- Remove the skin with a vegetable peeler.
- Brush pumpkin slices with olive oil.
- Place on a heated grill for 5 minutes on each side.
- Remove from grill and cut into one-inch cubes.
- Set aside.
Tofu Ingredients
- 8 oz. firm tofu, cut into 1/2-inch thick planks
- 1 tsp. olive oil
Tofu Instructions
- Brush both sides of the cheese with olive oil.
- Place tofu on a hot grill or frying pan.
- Reduce to medium heat and grill for 1-2 minutes on each side.
- Remove from heat and allow to cool.
- Cut into ¾-inch squares
Ingredients
- 4 cups mixed greens
- 1 jumbo avocado, peeled, seeded, cubed
- 2 Tbsp. olive oil
- 2 Tbsp. white wine vinegar
- salt and pepper, to taste
Instructions
- Place olive oil and vinegar in a small jar and tighten the lid
- Shake to mix.
- Place greens in a medium bowl and drizzle with dressing.
- Plate the salad, and top with avocado, pumpkin, and tofu cubes.
- Season as desired.
- Serve immediately.
Avocado Bruschette
Serves 2

Ingredients
- 2-4 slices (depending on size) of Pagnotta, Sourdough, or French Baguette
- 2 avocados, peeled, seeded
- 1Tbsp. lemon or lime juice
- 1 clove garlic, minced
- 1 small tomato, finely chopped
- 2 Tbsp. white onion, finely chopped
- 1 Tbsp. cilantro, finely chopped
- salt and pepper, to taste
Instructions
- Heat oven to 400F.
- Brush both sides of the bread with olive oil.
- Place on a baking sheet.
- Bake for 10-15 minutes, flipping halfway through.
- Place avocado in a small bowl and mash with a fork.
- Add lemon or lime juice, garlic, tomato, onion, and cilantro, and mix.
- Spoon avocado mixture on toast, season as desired, and enjoy.
