Avocado, Feta, Pomegranate Bruschetta

This delightful and vibrant appetizer is perfect for any gathering. With its creamy avocado, tangy feta, and the sweetness from pomegranate seeds, it’s a refreshing twist on a classic bruschetta.

Serves 2

Ingredients

  • 4 thick slices of baguette bread
  • 1 avocado, peeled, pitted, mashed
  • 2 oz feta cheese
  • ¼ cup pomegranate seeds
  • ⅛ tsp white vinegar
  • 1 Tbsp olive oil
  • salt and pepper, to taste

Instructions

  1. Drizzle baguette slices with olive oil and toast lightly in the broiler or toaster oven.
  2. Place the avocado in a small bowl and mash it with a fork. Add the vinegar, salt and pepper, and mix. Spread the avocado mash on each slice of toast.
  3. Add feta crumbles.
  4. Sprinkle with pomegranate seeds.
  5. Enjoy.

Avocado, Sushi, Cucumber Rolls

Delight in these fresh cucumber rolls filled with creamy avocado, ripe, and salmon. This recipe combines simplicity with gourmet flavors, perfect for a light meal or an impressive appetizer.

Serves 2

Rice Ingredients

  • 2 cups short-grain white rice
  • 2 cups water
  • ½ tsp salt
  • 3 Tbsp rice vinegar
  • 2 Tbsp sugar 

Rice Instructions

  1. In a medium saucepan, bring water to a boil. Stir in the rice and salt. Return to a boil, stirring for five minutes. Cover and turn off the heat. Allow the rice to absorb the liquid for 18 minutes.
  2. Combine vinegar and sugar in a small bowl. Heat in the microwave for one minute or until sugar has dissolved.
  3. Transfer the rice to a large shallow bowl. Gently stir in the vinegar mixture and mix. Allow to cool completely.

Ingredients

  • 2 cucumbers, thinly sliced
  • 2 cups cooked white rice (recipe above)
  • 4-6 oz raw sushi-grade salmon, thinly sliced or chopped
  • 1 avocado, peeled, pitted, sliced

Instructions

  1. Place cucumber slices horizontally on a cutting board in overlapping rows.
  2. Add a layer of rice on the right half of the cucumber slices.
  3. Add a row of avocado slices next to the rice and salmon next to the avocados.
  4. Starting from the right side with the rice, roll up the cucumber rolls
  5. Using a very sharp knife, cut the roll into one-inch sections.
  6. Serve immediately.

Bacon, Parm, Avo Boats


Indulge in a delightful combination of flavors with these avocado boats. This simple yet satisfying dish makes for a perfect snack or light meal, bringing together creamy avocado, crispy bacon, and rich parmesan cheese in every bite.

Serves 2

Ingredients

  • 1 avocado, cut in half, seeded 
  • 2 bacon slices
  • ⅓ cup flaked parmesan cheese
  • cress sprouts (optional)

Instructions

  1. Preheat oven to 350˚
  2. Place avocado halves with the open side up on a baking sheet.
  3. Sprinkle on on parmesan cheese on each avocado half.
  4. Roll up a slice of bacon and place it in the center of each avocado half, where the pit used to be.
  5. Bake for 15 minutes or until the bacon is cooked and the cheese lightly browned.
  6. Garnish as desired and serve warm.
