Tasty Avo Toast

Serves 2-4

Looking for a delicious and nutritious breakfast or snack? Try this simple and satisfying recipe that’s packed with flavor and healthy fats. With just a handful of ingredients and easy steps, you’ll have a tasty dish ready to enjoy in no time.

Ingredients

  • 4 slices of toast
  • 2 ripe avocados
  • 1 lime, juiced
  • ½ tsp. garlic powder
  • salt and pepper to taste
  • 2-3 Tbsp. roasted pumpkin seeds
  • pea sprouts (optional)

Instructions

  1. Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon into a small bowl.
  2. Mash the avocado flesh with a fork.
  3. Mix in lime juice, garlic powder, salt and pepper.
  4. Spread avocado mash onto the toast.
  5. Sprinkle on pumpkin seeds.
  6. Garnish as desired.
  7. Serve immediately.

 

 

Mini Ahi Tacos with Avocado & Sriracha Drizzle

Serves 2-4

These mini tacos are a delightful fusion of fresh flavors and a tangy kick. The combination of fresh ahi tuna and creamy avocado, plus a sriracha drizzle for a bit of heat, makes a perfect appetizer or light, protein-packed meal.

Sriracha Sauce Ingredients

  • 1/4 cup plain yogurt
  • 1 Tbsp. sriracha

Sriracha Sauce Instructions

  1. Add yogurt and sriracha in a small bowl and mix.
  2. Set aside.

Taco Ingredients

  • 8 mini taco shells
  • 1 lb. sushi grade ahi tuna, cubed
  • 1 avocado, sliced
  • 2 Tbsp. chives, finely chopped

Taco Instructions

  1. Add a slice of avocado to the taco shell.
  2. Spoon ahi on top of avocado.
  3. Drizzle with sriracha sauce.
  4. Top with chives and serve immediately.

 

 

Avocado, Cucumber & Tomato Salad with Lime Vinaigrette

Serves 2 (meals) or 4 (side dishes)

Dressing Ingredients

  • 2 Tbsp. fresh lime juice
  • 1/4 cup extra-virgin olive oil 
  • 1 clove garlic, minced
  • 1 Tbsp. honey
  • ½ tsp. Dijon mustard
  • salt and pepper, to taste

Instructions

  1. Add ingredients to a small bowl and whisk together. 
  2. Refrigerate before using.

Salad Ingredients

  • 1 cucumber, thinly sliced
  • 2 cups cherry tomatoes, quartered vertically
  • 1 yellow bell pepper, sliced 
  • 1/2 red onion, sliced
  • 1 large, ripe avocado, seeded, peeled, sliced
  • 1/2 cup arugula

Salad Instructions

  1. Add salad ingredients to a large bowl.
  2. Drizzle with dressing and toss lightly.
  3. Enjoy immediately.
