Dressing Ingredients
- ½ cup extra virgin olive oil
- juice from 1 lemon
- 1 tsp. lemon zest
- 3 garlic cloves, finely minced
- 2 tsp. dry oregano
- sea salt and ground black pepper to taste
Dressing Instructions
- Add all dressing ingredients to a small bowl.
- Whisk to combine.
- Set aside.
Salad Ingredients
- 10 oz. baby arugula
- 1 large cucumber, sliced
- 2 California Gold avocados, sliced
- 6 oz. mung bean sprouts
- red pepper flakes (optional)
Salad Instructions
- Add the arugula, cucumber, avocado, and mung bean sprouts to a large bowl.
- Drizzle with the salad dressing.
- Toss lightly, sprinkle with red pepper flakes if desired, and serve.
